Mexican Gumbo and Black Bean Tacos


We love us some Gumbo over here in this vegan family....actually we love anything that is super saucy and full of flavor so a Mexican Gumbo is just the thing to warm the heart and fill the belly of my always hungry and growing boys. My husband actually got us started in this idea because he is obsessed with the Mexican Gumbo at Qdoba and was eating it at least twice a week. I'm pretty sure there is msg in the restaurant food and no Mama who has any knowledge of the dangers of msg can feed this stuff to their family without some guilt...so we have started making a similar version at home.

My version goes as follows:
~One pot of Vegan Tortilla Soup (recipe below)
~one batch guacamole (also recipe below)
~fresh salsa or tomatoes
~brown rice
~black beans
~tortilla chips

You basically put the beans and rice in a bowl and add several scoops of tortilla soup on top. Then add the fresh accoutrements on top so they stay cool and crush a few tortilla chips, if you desire, on top. Perfection!!

My boys also love tacos so we decided to serve them as well for dinner. I don't use a lot of soy products or even faux meat....it's not that I'm against them...they are actually quite delicious it's just that we don't use them very often because I try to avoid processed foods as much as I can. So since we already had the beans and rice I used these items as the bulk of the taco and added salsa, vegan sour cream and chopped romaine on top.


This picture was just the first plate I made...I'm pretty sure they ate at least ten between the older two of them :) This recipe is a must if you enjoy mexican food...let me know if you love it as much as we do!

Tortilla Soup recipe~
Ingredients:

1 tbsp olive oil
1/2 chopped onion
2 garlic cloves, minced
2 bell peppers, chopped
1 zucchini, chopped
1/2 cup green onion, chopped
3 tbsp ground cumin
One 28-oz can crushed tomatoes
1 can chopped green chili peppers, drained (optional)
3 cups vegetable broth
lime juice to taste
salt & pepper & crushed red chili pepper, to taste

1. In a large pot over medium to low heat, add the olive oil, onion and garlic. Sauté for about 5 minutes.

2. Meanwhile, chop the peppers, zucchini, green onion....Add the veggies into the pot and sauté for another 5-10 minutes.

3. Add in the crushed tomatoes,green chilis, cumin and broth. Stir well and season with salt and pepper. Simmer on low-medium heat for 25-30 minutes.

That is it!

Simple Guacamole Recipe~
ingredients:
1/2 white onion chopped
2 TBSP lime juice
3 Avocados
sea salt to taste

1. marinate chopped onion, lime juice and sea salt in a bowl for 10 minutes then add avocado and crush gently with a fork...then serve~

  2. Yay! Let me know how you like it when you try the gumbo! You may need to play around with the spices and add some others that you enjoy but the bones of this recipe are a "10" as we say :) I have a delicious cream of broccoli soup that we make all the time too.....will have to share that soon ;)
